The health risks associated with consuming food contaminated by E. coli

Consuming food contaminated by Escherichia colia bacterium commonly found in the intestines of humans and animals, can have serious health consequences, particularly when dealing with pathogenic strains such as E. coli O157. The most common symptoms include:

  • abdominal cramps
  • watery diarrhea
  • bloody diarrhea
  • nausea
  • fever.

These gastrointestinal disorders can be short-lived, but in certain situations, especially for the most vulnerable individuals, they turn into serious problems. One of the main risks is the development of hemolytic uremic syndrome (HUS)a rare but potentially lethal complication. Children under 5 years old, the elderly and immunosuppressed people are particularly vulnerable to this condition, which often requires hospitalization and treatments such as dialysis.

In addition to gastrointestinal and renal effects, the bacterium can trigger severe dehydrationespecially in cases of intense diarrhea, and, in the most extreme cases, sepsisa systemic infection that can prove fatal if not treated quickly. Other types of infections, such as urinary tract infections, are less common but not impossible, particularly if E. coli spreads from the intestine to other parts of the body.
